Fast Peanut Butter Fudge

Updated: Mar 9

This is my dad's favorite fudge and my mom who didn't love to bake would make it because it is so simple. I don't where the recipe is from other than written on an index card in my mom's recipe book.

Store the fudge at room temerpature.

Makes 1 9X9 pan

2 sticks butter, cut up into small pieces

1 cup peanut butter

1 teaspoon salt

1 tablespoon vanilla extract

4 cups confectioners sugar

  • Combine butter, peanut butter, and salt in a medium saucepan and melt together over medium-low heat.

  • Remove from heat and stir in vanilla extract.

  • Add in confectioners sugar and mix until completely combined.

  • Add fudge to the 9X9 pan and using your palms or the back of a glass, press the mixture into the pan until smooth and even.

  • Allow to set up, at least 2 hours, before cutting into 1-inch squares.
