Refreshing Cucumber Tarragon Salad

Serves 4

This light and refreshing salad is perfect for a hot summer day. The cool cucumbers, bright tarragon, and tangy dressing are refreshing and will leave you feeling revitalized.


For the salad:

2 English cucumbers or 5-6 Persian cucumbers, thinly sliced

1/4 cup thinly sliced red onion

3 tablespoons chopped tarragon leaves

For the dressing:

2 tablespoons tarragon vinegar or white wine vinegar

1 tablespoon Dijon mustard

1 teaspoon honey

2 tablespoons extra virgin olive oil

1/4 teaspoon salt

1/8 teaspoon black pepper


  1. In a medium bowl, combine the cucumbers, red onion and tarragon.

  2. In a small bowl, whisk together the vinegar, Dijon mustard, honey, salt, and pepper.

  3. Slowly whisk in the olive oil. 

  4. Pour the dressing over the cucumber mixture and toss to coat. Serve the same day as making.
