Roasted Peaches

Serves 4


4 peaches, halved and pitted

2 tablespoons olive oil

2 tablespoons honey

1 vanilla bea or rosemary sprig

Large pinch salt


Preheat the oven to 400F


In a 9 X 9-inch baking dish, whisk together olive oil, honey, vanilla or rosemary, and salt. Add peaches and toss to coat; place peaches cut side down.

Place in oven and bake, uncovered, until tender, about 20 minutes. Serve with whipped cream.


Whipped Cream

There is no need to add sugar to this whipped cream if using the sundried tomato powder - it has notes of caramel and molasses.

1 cup heavy cream


Combine cream and sugar in a bowl and whisk until soft peaks form. Serve immediately with shortcakes or slightly re-whip cream just before serving.
