Spiced Molasses Cookies

This recipe is what my mom baked when I was a child. I don't know the origin, the author or any other details other than it is delicious and conjures so many amazing memories for me. I hope you enjoy these as much as we do!

Makes 5 dozen

2 cups all-purpose flour

2 teaspoons baking soda

¼ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground cloves

½ teaspoon ground ginger

1½ sticks unsalted butter, room temperature

1 cup granulated sugar

2 tablespoons molasses

1 egg

Granulated sugar for rolling cookies

Preheat oven to 375° F

In medium bowl, whisk together the flour, baking soda, cinnamon, salt, cloves, and ginger. Set aside.

In the bowl of an electric mixer using the paddle attachment, beat together the butter and sugar on medium speed, until light and fluffy, about 5 minutes.

Add the molasses and egg, beating until well blended.

Stir in the dry ingredients and mix on low speed until combined.

Remove the dough from the bowl and wrap in plastic wrap in a flat disc. Chill the dough in the refrigerator for about 1 hour or until firm.

Remove the dough from the refrigerator and form the dough into 1-inch balls.

Roll in sugar; place on parchment-lined cookie sheets about 2 inches apart.

Bake for 6 to 8 minutes or until golden brown. Let stand for 1 minute. Transfer cookies to a wire rack to cool.
