Creamed Lima Beans
I grew up eating these year-round. My granddad grew limas, and he would freeze them for year-round.

.
In my house, this serves one - me.
2 cups fresh lima beans
2 tablespoons butter
¾ cup half and half
1 teaspoon kosher salt
1/4 teaspoon black pepper
Blanch lima beans in boiling salted water until just tender, about 15-20 minutes.
In a medium saucepan, add the butter and half and half.
Add lima beans, salt, and pepper to the pan and cook over medium heat.
Using the back of a wooden spoon, slightly smash the limas, and continue cooking for another 5 minutes.
