The Mediterranean Grilled Cheese

Feel free to substitute other Mediterranean-inspired ingredients like sun-dried tomatoes, artichoke hearts, or fresh basil.

Makes 1 sandwich


2 slices of sourdough bread

1 tablespoon mayonnaise

1/3 cup shredded mozzarella cheese

3 pieces thinly sliced pear or apple

1 tablespoon crumbled feta cheese

1 tablespoon sliced kalamata olives

1 tablespoon chopped roasted red pepper

1/2 teaspoon dried oregano


Prep and spread: Spread a thin layer of mayonnaise on the outside of each bread slice.

Assemble: On one slice of bread, layer the mozzarella cheese, pear, feta cheese, kalamata olives, roasted red pepper, and sprinkle with the dried oregano. Top with the other slice of bread (mayonnaise side facing out).

Cook: Heat your skillet or panini press over medium-low heat. Place the sandwich on the heated surface and cook for 2-3 minutes per side, or until the bread is golden brown and the cheese is melted.

Slice and enjoy: Use a sharp knife to cut the sandwich in half and serve immediately.
