Tomato Shrub

What is a shrub? A shrub is a concentrated syrup made with fruit, sugar, and vinegar. Also called "drinking vinegar," shrubs were originally a way to preserve fruit and create refreshing, probiotic-rich beverages. The result is a tangy, complex concentrate that's mixed with sparkling or still water to make a refreshing drink, or used as a cocktail mixer.
Ingredients:
2 pounds ripe tomatoes, chopped
½ cup granulated sugar
1 teaspoon salt
1 cup apple cider vinegar
Optional: fresh basil, oregano, or black pepper
Instructions:
Make the base: Combine chopped tomatoes, sugar, and salt in a bowl. Let sit for 2-4 hours up until overnight, until tomatoes release their juices and sugar dissolves.
Strain: Pour through a fine-mesh strainer, pressing solids to extract liquid. You should have about 1-1.5 cups of tomato syrup.
Add vinegar: Stir the apple cider vinegar into the tomato syrup. Add herbs or spices if desired.
Rest: Transfer to a clean jar and refrigerate for at least 24 hours.
Strain again: Remove any herb solids before using.
To serve:
Mix 1-2 tablespoons of shrub with 6-8 oz sparkling water over ice. Adjust to taste.
This creates a savory, tangy drink that's incredibly refreshing! The tomato shrub works beautifully in cocktails too - try it with vodka or gin. Store refrigerated for up to 3 months.
