Banana Bread with Lemon and Rosemary

Makes 1 9 X 5 loaf

3 bananas, mashed

½ cup light brown sugar

¼ cup coconut oil, melted

1 large egg

1 cup oat flour

½ cup all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

Zest of one lemon

1 teaspoon finely chopped fresh rosemary


Heat the oven to 350° F. Grease a 9x5-inch loaf pan or line it with parchment paper.

  1. In a medium mixing bowl, combine the mashed bananas, light brown sugar, melted coconut oil, and the egg. Mix until well blended.

  2. In a separate bowl, whisk together the oat flour, all-purpose flour, baking powder, and baking soda.

  3. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Avoid overmixing to ensure a tender loaf.

  4. Stir  in the lemon zest and finely chopped rosemary.

  5. Transfer the batter into the prepared loaf pan.

  6. Bake for 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

  7. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
