Lemon Thyme Posset

Yield: 4 servings

Ingredients

  • 2 cups heavy cream

  • 2/3 cup granulated sugar

  • 4 sprigs fresh thyme

  • Pinch of kosher salt

  • 1/3 cup fresh lemon juice

Directions

  1. Combine the heavy cream, sugar, thyme, and salt in a medium saucepan.

  2. Bring to a boil over medium heat, stirring until the sugar dissolves.

  3. Reduce the heat slightly and stirring constantly, boil gently for 5 minutes.

  4. Remove from the heat and let the thyme steep for 5 minutes.

  5. Strain the cream mixture into a bowl or measuring cup.

  6. Stir in the lemon juice.

  7. Divide among serving glasses, ramekins, or scooped/cleaned lemon halves.

  8. Refrigerate for at least 4 hours, or until set.
