Supernatural Brownies

There’s something deeply comforting about baking something to share - it’s the act of nurturing. Feeding someone else can feed something in us, too. This week I’m sharing a recipe from former colleague Nick Malgieri, who I worked with at the Institute of Culinary Education. His Supernatural Brownies are one of his most well-known recipes This beloved recipe was actually the result of a mistake. Nick was doubling a brownie recipe and forgot to double the flour. What came out of the oven was unexpectedly rich, soft, and perfectly fudgy. Years later, it’s become one of his most famous recipes.


Supernatural Brownies

Recipe from Nick Malgieri

Makes 1 - 9 X13 pan


  • 2 sticks (8 ounces) butter, more for pan and parchment paper

  • 8 ounces bittersweet chocolate

  • 1 cup dark brown sugar, such as muscovado

  • 1 cup granulated sugar

  • 4 eggs

  • ½ teaspoon salt

  • 2 teaspoons vanilla extract

  • 1 cup flour


Butter a 13-by-9-inch baking pan and line with buttered parchment paper. Preheat the oven to 350 degrees. 

  1. Combine the butter and chocolate in a heatproof bowl and place on top of a double boiler. Allow to melt and remove from heat, whisk in both sugars, and cool slightly. 

  2. In a medium bowl eggs, salt and vanilla.

  3. Whisk in the chocolate mixture. 

  4. Gently stir in flour until just combined. 

  5. Bake for 35 to 40 minutes or until shiny and beginning to crack on top. 

  6. Cool in pan on rack.
