Tomatoes with Whipped Ricotta & Basil

Serves: 4–6

Ingredients:

  • 2 cups cherry tomatoes

  • 1 cup ricotta cheese

  • 2 tablespoons heavy cream

  • 2 tablespoons olive oil

  • 1 teaspoon balsamic vinegar

  • 1/2 teaspoon flaky salt

  • 1/4 teaspoon black pepper

  • 1/2 cup fresh basil leaves

Instructions:

  1. Whisk ricotta with heavy cream until smooth. Season with a pinch of salt and the black pepper.

  2. Spread the ricotta mixture onto a serving platter.

  3. Place the cherry tomatoes on top of the ricotta.

  4. Drizzle with olive oil and balsamic vinegar.

  5. Scatter the basil leaves over the top.

  6. Serve immediately with bread.
