Tomatoes with Whipped Ricotta & Basil

Serves: 4–6
Ingredients:
2 cups cherry tomatoes
1 cup ricotta cheese
2 tablespoons heavy cream
2 tablespoons olive oil
1 teaspoon balsamic vinegar
1/2 teaspoon flaky salt
1/4 teaspoon black pepper
1/2 cup fresh basil leaves
Instructions:
Whisk ricotta with heavy cream until smooth. Season with a pinch of salt and the black pepper.
Spread the ricotta mixture onto a serving platter.
Place the cherry tomatoes on top of the ricotta.
Drizzle with olive oil and balsamic vinegar.
Scatter the basil leaves over the top.
Serve immediately with bread.
